The alembic is the archetypal still, a two-piece assembly of a rounded lower vessel called the cucurbit, which holds the liquid and sits over the heat, and a domed cap called the head, which catches the rising vapor and drains it through a curved spout into a receiver. The name descends from Arabic al-anbiq, itself borrowed from the Greek ambix, "cup," and the device was standardized by the alchemists working under the name Jabir ibn Hayyan in the eighth and ninth centuries before the term entered Latin as alembicum. It is not a museum piece: the copper pot still used to distill whisky, cognac and rum today is a direct functional descendant, changed mainly in scale and in the metal it is built from.

How the Alembic Works

An alembic is built in two parts that are set one on top of the other rather than blown as a single piece. The lower vessel, the cucurbit, is a rounded pot that holds the liquid to be distilled and sits directly over a heat source, traditionally a bed of coals or a small furnace. As the liquid warms, the more volatile fraction turns to vapor first and rises into the domed head fitted over the cucurbit's mouth. The inside of the head is cooler than the rising vapor, so the vapor condenses on its curved wall the moment it touches it, the same way steam beads on a cold window. Gravity pulls the condensed liquid down the inside of the dome to a channel that narrows into a spout, and the spout carries it out of the apparatus and down into a waiting receiver, drop by drop, without ever letting the collected liquid touch the hot vessel again.

Because the vapor that rises first is enriched in whatever component boils at a lower temperature, a single pass already partly separates a mixture, and alchemists and early chemists ran the same liquid through an alembic more than once, a practice called rectification, to concentrate it further. The head could be swapped for other cap designs, the tapered rosenhut for essential oils or the wide moor's head for bulk distillations, while the cucurbit and the basic principle stayed the same. Nothing about the process requires anything the eighth century did not have: a heat source, two shaped vessels, and an understanding that a cool surface will condense a hot vapor.

History and What It Became

The alembic's lineage runs through the Greek alchemical writers of late antiquity, who worked with early stills, into the hands of Arabic alchemists of the eighth and ninth centuries, most associated with the corpus attributed to Jabir ibn Hayyan, who fixed the two-vessel cucurbit-and-head design that later Europe inherited essentially unchanged. The word itself carries that history: Arabic al-anbiq attached its own definite article to the Greek ambix, and the compound passed into medieval Latin as alembicum during the translation movement that brought Arabic science into Europe, entering English by the fourteenth century, sometimes clipped further to "limbeck."

The device reached a wide readership when Hieronymus Brunschwig's Liber de arte distillandi, printed in Strasbourg in 1500, set out its use in the first printed manual devoted to distillation, aimed at apothecaries and surgeons rather than only alchemists. From there the alembic split along two paths that never really diverged: one stayed in the chemistry laboratory, gradually replaced for routine work by the round-bottom flask and a separate condenser, and the other went into the distillery, where the same cucurbit-and-head shape, built in copper instead of glass or clay, is still called a pot still and is still how a great deal of the world's whisky, cognac and rum is made. Few pieces of alchemical equipment can point to a living industry as their direct descendant.
